Sultana Scones

A chance to celebrate the end of the week and indulge in a bit of naughtiness. This is a simple scone recipe that is very easy to make.

You will need:

  • 225g SR Flour
  • 80g Butter (Cold & cubed)
  • Pinch of salt
  • 2 Tbl Spoons sugar
  • 80g Sultanas
  • Milk to bind (100ml approx.)

Set oven to high (220 deg c) – Sift flour into large bowl and add salt butter. Crumble butter into flour with fingers until it resembles bread crumbs.. Add sugar and sultanas and mix with a metal spoon. Create a well in the middle of the dry mix and add milk and mix in with spoon. (It will be a bit sticky but not sticking to the bowl greatly).

On a lightly floured surface gently knead and shape the dough (this will make it less sticky and easier to roll). Roll out to a thickness of about 2.5 cm and cut into rounds or whatever you fancy and put onto a lightly greased baking sheet.

Brush with milk or beaten egg wash and bake on top shelf of oven for 7-10 mins or until golden brown. I used milk as I am not a great fan of the uber gloss. (Each to their own).

Serve with jam and cream (clotted if you dare!) Nom nom…

Off to make some pizzas for the kids now.
